Our schedule is back to normal – no visitors, birthdays, etc. this week. That means I’m back in the swing of cooking as usual. After a lot of eating out over the weekend celebrating my birthday and Than’s birthday, it will be nice to get back into a healthier routine this week – though I am pretty sure Baby Veltman appreciated all the treats. She especially likes sweets!
Monday: Mexican Rice Bowls with Chicken (made it on the menu last week – never made it to the table!)
Tuesday: Spaghetti and Turkey Meatballs with Salad
Wednesday: Seasoned Pork Loin and Asparagus
Thursday: Potstickers and Stir Fried Veggies
Friday: Chicken Sausages and Potatoes (and a veggie TBD)
Saturday: Mini Tortilla Pizzas and Salad
Sunday: Pumpkin Waffles and Turkey Bacon
